Several I would list have already been mentioned: Joni Mitchell and Imogen Heap, Diana Krall, Alison Krauss.
I didn't see Regina Spektor yet. (Sorry if I missed it.) I find her music to be relatively poorly recorded, but I like the her music and her voice.
