Indeed....I was trying to thing of the best example I could think of of a possible change in pitch with the attack of a note. Somewhere when I was taking guitar lessons, I learned that the pitch can be as large as a half step with a nylon string. Of course that's when you're trying to pluck the string vey loudly. I would also think that a nylon guitar string would be one of the most dynamic instruments for this. It's happening because you're pulling the string far enough to change its pitch. I wouldn't expect a piano string or a drum to have as large of a change of pitch....since those are hit and actually not pulled.
