So, i've bought some modded Grado 325is. Basically they've been modified so that each driver has its' own separate (detachable) cable.

Does this mean i'd just need mono cables? Do i not need to check the polarity of the sockets if i were to have some cable made and if so how would I? I've obviously got as far as pulling out my multimeter but can anyone offer help or advice here?

Mono will work because at that point you only need one speaker.  You will probably need to check polarity, just do it by touching the wires together and see if they work in that configuration.  If they do, then you're good to solder.  Wait for someone else to clarity the second part though :)
