Your first statement is factually inacurate. When an appropriately specified vacuum tube is professionally applied in a well proportioned circuit of appropriate topology the results can be very fine both objectively and subjectively.
 
However, in my experience many commercial companies cut corners and do not apply the technology optimally, and hence allow their circuits to generate a spray of harmonics. It seems as if some people like that result, which suggests that your second statement is reasonable.

I don't listen to sound.  I listen to music.  Tube and SS amps are both capable of making beautiful-sounding music, but some do it better than others.

Currently listening to my Millett MOSFET-MAX with my SR225i's. 
 
If this inferior sound, then so be it. Bring on the inferior sound!
