Just wondering if I'd be able to get a pair of Beyerdynamic DT770's (80 Ohm) and hook them up to a Turtle Beach DSS2 for Surround Sound gaming on my Xbox 360 and Surround Sound Movie watching for Blu Ray's on my PS3?

Yes you can.

Just make sure under PS3 settings for Blu-Ray movies, it is set to Bitsream instead of LPCM.
Also, no DTS support. Make sure to only enable DD 5.1, not DTS.

What's the difference between the Bitstream and LPCM? Is that also something I want turned on for my Surround Sound System?

Bitsream = raw undecoded sound data.
LPCM = lossless uncompressed audio.

With the DSS2, because the PS3 is using an optical cable to connect with it, enabling LPCM for surround channels would not be possible because the limit of an optical cable for LPCM is only 2 channels.
HDMI on the other hand can take up to 8 channels of LPCM.

Setting the PS3 to output audio in bitsream (because it is undecoded) will then allow the DSS2 to process the audio.

Under your PS3 sound settings, you basically only want DD5.1 and LPCM 2 channel enabled.
