For the HD-600, any of the three tubes you showed would be great. I like to use a black plate Sylvania 12AT7WA, triple mica with them. These tend to have tighter highs and lows than the grey plates I normally prefer, which are better in the midrange.

Errr...read my second sentence.

Also, if you do a search for the MicroZOTL Tube Rolling Thread, there's more than you'll ever want to know about my thoughts on 12AT7's, along with other peoples' comments.

I buy mainly on ebay. I've got a good tube tester, and I'm learning who some of the reliable dealers are. I try not to buy tubes at premium prices until I'm sure of the dealer.
