I have an old Bose stereo system. Maybe 10 or 15 years old. Still works really well. The speakers are plugged into and I believe amplified by the subwoofer. If I were to plug some headphones into the sub instead do you think that this would make a decent headphone amp? I'm just trying to get a good set up together with what I have before I go and drop a ton of money on a desktop headphone amp. Thanks.

No, it won't work.

The subwoofer probably has an amplifier in it, but it also has a crossover inside.  The crossover sends the low frequencies to the subwoofer and the high frequencies to the satellite speakers.

So if you plug headphones into the subwoofer, you'll only get the higher frequencies coming through the headphones.  Also, the subwoofer would probably keep playing while you were listening.  I doubt the sub would integrate well with the headphones - a lot of tuning is needed to get speakers to sound good together.
