Best headphones you've ever listened to.

have not heard Senn.800's nor Denon 7000 nor R10's but have heard some electro-statics and they sound brilliant/lush but overall I will say the Sony SA-5000 is best headphone my ears have had the pleasure of hearing with an overall music genre collection ... and reasonable/sane price at that ....

That varies. Right now I am convinced the Fidelio X3s are the best pair, while listening to Schostakovitsch 5th symphony:

The Meze Empyrean.

They went an unique approach with the sound tuning.
It has a very full sound that feels pretty speaker like. It's also not focused on treble which makes it very easy to listen to without any fatigue.

Recently bought a Cayin HA-6A to pair them with and I don't think that there is currently another pair of headphones which I might like more than the Empyrean.

Three way tie between the HE60, L3000, and HD800. To my ears, these are the best of everything I have heard and owned.

HE60 and HD800 - most natural tonal balances of any cans I've owned/heard. Sounds almost as if you are there with the recording artist.

L3000 - most balanced...only can I've heard that realistically reproduces lower frequencies while not overpowering the rest of the spectrum, keeping in tact high detail resolution and imaging.

Wow. More than a decade ago lol

Best I've ever heard until this date would be:

009
L3000
TC
Susvara

And in no order, it's more about mood and music choice. Each with their imperfections.. the best I've ever heard.

My Abyss Phi TC.

Maybe the Raal SR1A after that.

For me the Abyss are essentially perfect. Fast, detailed, soundstage and imaging right up there with the best, tight visceral slamming bass that goes way down low. Sound good with every genre for me, a requisite given my listening habits where I'll frequently do things like go from Slaughter to Prevail's Demolisher to Nina Simone from one track to the next.

In terms of detail and resolution, it's the Stax SR-009. All I could say was.. wow. I didn't enjoy it, though.

Nostalgia will keep the #1 spot for Sennheiser HE60; though I enjoyed the Stax SR-007 mk2 port modded a lot more.
My current headphones are cheaper and still give me more then enough enjoyment.
