Its actually quite a dilemma when my favorite genre's of music are recorded in a matter that is so unrefined and dirty (Raw Black Metal, OSDM, Funeral Doom etc.). I use Agalloch's The Mantle however as my go to album for demoing headphones. The presence of clarity, scale and spectrums of sound covered on it do a great job assessing a pair of cans for guitar based music

Best album. The hammer of the god's the song remains the same remastered version 2007. Led Zeppelins stuff was not superbly recorded sound wise but my personal love of their music and the quality of this remastering seals the deal for me.

Best song. Dire Strait's Brothers in Arms from one of their live albums On The Night.

Other well recorded classic rock stuff- Steely dan ( really well done), the eagles, who, Floyd, fleetwood, Mac, Beatles, dire straits, mark knopler, Jackson Browne

I'll go for stuff that's well recorded with a lot going on.
And a lot of different textures.
 
Electronic music fits the bill > Redshift, for example.
The great Oxygene album from the 70's is still one of
the best headphone albums IMO
Yeah, Floyd, but mostly Wright's underrated and
often overlooked work on the keys.
I think Waters's lyrics and singing have become really tiresome
by now.  Mostly, anyway.
The (remastered) Gentle Giant albums.
 
There are really so many good ones, everyone

Alan Parson - I robot and a lot of his other albums
Pink Floyd - Dark Side of the moon quadrophonic release

 
Steve Wilson - all of his stuff is very well recorded and mastered
Lots of other albums and music to much to remember.

If you want some heavy stuff that is still very musical check out Animals as Leaders. Their first album (self titled) is my favorite, all guitars and bass are performed by Tosin Abasi. Electronic drums and other synthesized effects are done by Misha Mansoor.
 
My favorite track from the album is Soraya
 
 
 
Another great track, this time from their second album (Weightless) is Odessa. For this album Tosin brought on Javier Reyes on guitar and Navene Koperweis on drums/engineering. You can hear the difference having a real, physical drummer makes on this album.
