Sound signature? Do you want something hifi? Flat? Reference? Or more fun? Bassy? Sparkly?
 
In that range, here's some suggestions:
 
Fiio E10 for DAC/AMP or just get a Xonar Essence STX sound (if gaming on PC, if gaming on console, scratch this). Alternatively, just use an AV receiver if you have one and you're good to go (plug console into receiver).

Consider the Ultrasone Pro 900 (closed) or Pro 2900 (open).

Sennheiser HD600 + Hifiman EF2A should net around $500.  The EF2A has a DAC as well.  If you don't care for a DAC I'd probably just get an Objective 2 from JDS.

For listening to movies and games, without music as a primary, I would have to suggest an open headphone for you. You have a nice budget...humm.
 
I'd say beyer dt990 with amp/dac.You could get the 600ohm version and get the amp suggested above....the objective 2.
