@markm1 Here's some of the better new OSDM bands around right now. There are many more out there of course, but these are my favorite, and in my opinion the best. If any others come to mind I'll post them in the near future.
Undergang - Indhentet Af Døden: Groovy, brutal, interesting death metal that has some real guts. Getting this album is a no-brainer, as is all of their other material.

Domains - Sinister Ceremonies: The absolute best Morbid Angel worship you'll ever hear. These dudes are from Spain. This album is a free download, so there's no excuse not to get it.

Drowned - Idola Specus: These Germans have been around since the '90s, but it took them quite a long time to release a full length. It's an awesome example of Incantation-style OSDM with some of my favorite riffs. Even my wife likes it, it's that good.

Disma - Towards the Megalith: Crushing music that borders on death/doom. Craig Pillard's vocals are really powerful.

Hooded Menace - Never Cross the Dead: These guys don't border on death/doom, they are the pinnacle of it. Everything they've done is exceptional.

Dead Congregation - Promulgation of the Fall: Death metal in Incantation's style, but honestly, these guys almost do it better than Incantation. Every song is very interesting and well-rounded.

Cerekloth - In the Midst of Life We Are In Death: Very morose sounding, and well thought out.

Excoriate - On Pestilent Winds: The production on this album is vicious and put to good use, as the songs are rippers.

Venenum - Venenum: This album could be the soundtrack to every vampire movie ever made.

Skeletal Remains - Condemned to Misery: This is maybe closer to the Florida style than anything else on the list, so if you dig that sound be sure to check them out. I can listen through the entire album with no problem.

Funebrarum - Sleep of Morbid Dreams: These guys rip! This album is mandatory.

Obliteration - Black Death Horizon: Weird, awesome death metal from Norway. The drummer kills it on this, and the riffs are pretty out there. It never gets old to me.

Desecresy - Chasmic Transcendence: Other-worldly riffs from Finland, Desecresy somehow makes OSDM into sci-fi.

Cruciamentum - Charnel Passages: I had somehow put off listening to this last year, but a fellow head-fier posted it in this thread and I finally gave it a whirl. I bought it ASAP and have been jamming it ever since. They are Grave Miasma's other half, so check them out too if you like what you hear.

Pissgrave - Suicide Euphoria: You like Symphonies of Sickness, so I figure this won't be too big a pill for you to swallow. It's pretty nuts though, especially the vocals. Straight pitch-shift with no variation the whole way through.

Charon - Sulphur Seraph (The Archon Principle): Maybe the most underrated album in this list, but a true gem. The album isn't pure death metal, but a bit black. Riffs, compositions, and vocals are so good that I have to include it.

So you mentioned grindcore in relation to Carcass. Symphonies of Sickness is indeed grind, goregrind to be precise, but I think it blurs the line enough with its song lengths and guitar work to be considered death metal. Reek of Putrefaction on the other hand is up and up GOREGRIND, and one of the best examples of the genre (in fact it started the genre). I think it's an album that's either love or hate, and I for one think it's awesome.

And here are three goregrind bands heavily influenced by early Carcass who carry the banner well.
The County Medical Examiners - Olidous Operettas
