Okay, just wanted to post an update here in case anyone else is looking for answers (apparently I wasn't good enough at searching to find it)
From the support agent I spoke on the phone with, both the NW-A300 and NW-ZX700 series can overheat if both charging and digital output is enabled, so they've disabled it. My Surface Duo 2 can output and charge at the same time, so it does seem reasonable that Sony has disabled it on purpose. I tried both USB-C to USB B (it's what the UDA-1 has lol) and USB-C to S/PDIF, neither worked.
I know this is kind of a small hill to die on, but I'm returning the Walkman and hoping their next iteration supports both.
(Coincidentally, the HiBy that was linked wouldn't work for digital output since the Walkman fundamentally doesn't support it)
