Because people no longer have the attention span required to type out or read "headphone". Or we can just use the Family Guy explanation: It's because you touch yourself at night.

Or, you can stick tunas in your ears and we can call them "tunas" instead of "cans"

Probably "cans" originally was a not very serious expression coined due to the remote similarity with certain kinds of containers. It's like some folks writing "tuna" for FM tuner. Consider it Head-Fi lingo and be done with it
