As I'm also thinking of upgrading from my HD650, the HE-500 is probably the one I'd pick (although, in my case I'd probably upgrade my amp first).

Yes, because the HE-500's are power hungry. Which amp you have btw?

HE-500 is a fantastic upgrade coming from the HD650.
 
I find going from the HD600 to HD650 is more of a sidestep.

Pretty much any top tier open-backed can, provided you like the sound signature of it.

No, just new stuff comes out and these fall back a bit. Ever seen what the headphone market was like before the 1990's? The best ones from then are nowhere near today's offerings.
 
DT880, AKG K701, HD600. They were all top-tier once, but then came along the HD800, T1 and a whole other bunch of offerings that make the HD600 mid-tier in comparison today.
