Jimi Hendrix covering Bob Dylan's All Along the Watchtower. Bob Dylan on the Hendrix version: "It overwhelmed me, really. He had such talent, he could find things inside a song and vigorously develop them. He found things that other people wouldn't think of finding in there. He probably improved upon it by the spaces he was using. I took license with the song from his version, actually, and continue to do it to this day."

Gotta be "Man Of Constant Sorrow" from the Brother Where Art Thou movie. This is a very old standar first written in 1913 and covered by many including Dylan, Ginger Bakers Airforce, Peter Paul And Mary, and Rod Stewart. I have only heard the Setwart version which was terrible...IMHO
