VLC (best media palyer hands down)
ADIUM (best msn alternative)
Firefox (nuff said)
Soundsource (for switching USB DAC)
Boxee (Boxee :: Login) (Check it out, best program user interface wise for mac, beats Plex i reckon)
UnrarX (why didn't mac come with rar support)
Utorrent for Mac (Nothng beats Utorrent atm, been using it since forever in windows too)
Burn (burner, simple to use too)

I just converted all my FLAC files into ALAC using XLD. It's an awesome program.

Switch - Converts any flac to wav so I can bring it to itunes as Apple Lossless. I know about Fluke but I'd rather be able to hear the song on my iPod too.

Photoshop/Illustrator/InDesign - Without these, I can't pay the bills.

Dreamweaver/Flash - Without these, I can't develop my website.

Toast - Because if I want to make an MP3 cd, iTunes SUCKS at it.

Stellarium - When I'm in the city, I love using this to stargaze and see how the starry sky will look like in the coming days.

Cyberduck - Gotta put those files onto my website somehow.

That's about it for the ones that're always up. I have a ton more. Ones that records your computer screen, ones that compresses it, things like that.

iAlertU: motion sensitive security system
Delicious Library: barcode scanner for isight
Grab: configurable screenshot capturer
EarthDesk: realtime satellite imaging desktop background
SmartSleep: enables instant true sleepmode a la PC for mac

ssX - Happy Me Maker
CS4 - Imaging
Last.fm - Music Scrobbler
Tomato Torrent - Torrentizer
Tinker Tool - Makes hidden options in OSX not so damn hidden
UnRarX - Makes life easy when i'm like, "oh what do i do with all those files...*click...oh yeah"
VLC - Also makes life easy when Quicktime is being a woman. oh yeah..
Quicktime - bleh.
iTunes Menu - I use it for the ability to see the Now Playing song title in menu bar. (does it prettier than You Control Tunes)
You Control Tunes - Use it only for the forward backwards and pause buttons in the menu bar. (only because iTunes Menu doesnt do it but if it did it would probably do it prettier)
ClearDock - Makes my dock clear, or whatever color i choose, since i'm not using Leopard.
RSS Menu - For notification of favorite site updates.
Colloquy - Chattage
iSquint - Converts pretty much any video format for iPod or just your viewing pleasure.
Switch - I personally use it to convert WMA to Mp3, it does all that noise
Desktunes - Shows song info and album art on your desktop
Drop Copy - Sending files on the network
LiteIcon - Icon changer doodad
Miro - YouTube video downloader

Firefox, iTunes, VLC, audacity, Doomsday (Doom source port), Photoshop. Those are all the apps I really use, besides the spacebar preview.

Apps not already mentioned that I use, and those worthy of a repeat:

Omniweb: best browser for any OS.
Amadeus Pro: For recording LPs at 24/96, sound editing, track conversions.
Microsoft Expression Media 2: Organize, and archive my images (tons), pdfs, videos etc.
Microsoft Office: iWork just doesn't cut it yet, and I hate iCal, and Apple Mail, so it's Entourage for me.
Endnote: Heavy duty reference editor plugin for MS Office.
MacTubes: YouTube thingy
Onyx: THE best utility for keeping the Mac running happy (and I've tried them ALL)
iChm: Special file reader
Zinio: For digital Stereophile!
Photoshop CS3: A must for my pictures
Cyberduck: Ftp file downloader
Savvy Clipboard: Allows me to keep scores of items in the clipboard instead of just 1
Spyder 2Pro: Works with the 'puck' to calibrate a monitor.
Starry Night Enthusiast 5: Hot stuff for star stuff.
Superduper: Woe unto you if you don't have a backup bootable drive (thanks to this program) should disaster strike
You Control Tunes: Control iTunes from the menu bar. Puts CoverSutra to shame (which I paid for, gah!), and it's FWEEEEEEEEE.
Visual Hub: Video file conversion (now discontinued)
Steermouse: To run my uber Logitech G5 gaming mouse
DOSBoot: Allows me to play old PC games (abandonware) in DOS emulation mode (good stuff)
Undercover: by Orbicule Software. Beware all thieves if they think that my laptop looks theft-friendly: Undercover is onboard. And if it doesn't work, I get double my money back.

Whew. That's some. I'm tired.

Frequently used free apps, in alphabetical order:
Address Book: Apple's native contacts app. I use it with Quicksilver and sync it to my iPod Touch.
Adium: Very nice, customizable IM client. Allows me to run MSN, GTalk, and FaceBook. Too bad there's no video chat...yet. For that, I have the new Google plugin, iChat, and Skype anyway.
Alarm Clock: A simple, but pretty powerful alarm app.
Convert Pictures: Useful automator functions for converting images into different formats without having to go through Preview or Photoshop manually.
DisApPear: Hides and password protects folders.
ffmpegX: Powerful video converter.
Firefox: Not entirely happy with Firefox...but I prefer it over Safari and Camino. Maybe I should try Opera. I like the plug-ins though.
FormulaPro: To type on pdfs. I can use Adobe Acrobat 8 for this, but FP is lighter.
GimmeSomeTune: iTunes companion app. It's a GrowlTunes replacement and it fetches and displays lyrics, album art, etc. Excellent app.
Grand Perspective: Tells me where all my hard disk space has gone.
Growl: Used with Adium and Mail.
Handbrake: Rips DVDs into video files (as opposed to Video_TS folders)
Image Tricks: I use this to quickly crop images.
iSquint: Converts videos. Lighter and sometimes better than ffmpegX. It's not open source and needs compiling. I forget what the new name is.
iStrip: Comic strip reader. A little buggy, but it works.
iTunes: Der. With ****loads of scripts.
Mac the Ripper: Very powerful DVD ripper. Rips into Video_TS folders.
Mail: Mail client. Came with the Mac.
Max: CD ripper and audio converter.
Preview: New Preview is powerful enough to replace some of my older apps (e.g., PDFLab). It's now a great tool for image/pdf viewing and manipulation.
Quicksilver (esp. with Calculator, Dictionary): This is a HUGE reason for why I love Mac OS X. I'm not even going to describe it. Get it. Now.
RapidoResizer: Quickly resize images.
Renamer4Mac: Quickly batch rename stuff.
Skim: Powerful PDF reader/notation-thing.
Stuffit Expander: Unzips and stuff.
Vienna: RSS reader. I prefer this over NetNewsWire and...what was that other one that was recently made free? Not sure why.
VLC: Video player. Is awesome.
