I am looking to use my EE Legend X IEMs with my iPhone, but struggling to find a way to do so given that the EEs are 2.5mm and, of course, the iPhone 12 has its lightning port. Any suggestions as to how best to do this appreciated!

Not sure but I think ibasso makes a dongle dac like youre describing. Otherwise the audio science review website tests and lists dongle dacs among other gear and you might find one there thats been tested.
