The AD700 are believed by many people here to be the best headphones available for gaming, and much better than any gaming headsets. I have only used the AD700 for a short time, and that was listening to music so I won't give an opinion of my own, but instead I'll try to point you in the right direction for your research.
A good place to start is by searching for Steggy's gaming headphone/headset reviews. He also talks a bit about the Astro Mixamp. You can find one of these reviews here.

PS. Boom mic mods for the AD700 (which can likely be applied to other headphones as easily) may help to give you some ideas. FraGTaLiTy's simple and inexpensive mod is along the lines of what people in this thread are suggesting for your Shures, while OperatorPerry's elegant mod requiring only a little more effort may be more to your liking and within your modding abilities.
