How would you compare their sound signature and overall quality compared to their big brother?

Overall the HD700 is warmer than the HD800. It has a noticeable warmth that the HD800 does not have. It is more musical yet maybe a bit less revealing on the top end. I would say it is one of my favorite headphones. It took a couple of hundred hours to break in. At first, out of the box, the bass was a bit bloated but the sound has really come together and the bass has become much tighter. TTVJ highly recommends the HD700!
