Does anyone know if there's anywhere online that breaks down the different tubes and how they might be different or what their sound is broadly like? Not so much between manufacturers, and I know some are interchangable, but I'm talking about the tubes that are different enough that they require adapters. Like, what's the difference between a 6922, 6SN7, 12AX7, etc.
I'm sure there are tons of variables and subjective things here. But I'm a relative tube noob and looking to understand a bit more as I begin to explore more tube rolling.

Not that I'm aware of. And such a list or site would be kind of a joke anyway, as not only do tubes from different manufacturers sound, well, different, but they can also sound quite different depending on the component they're used in. As well, any comments on the sonic traits are overwhelmingly subjective and based on the listener's perceptions, equipment, and personal preferences. Best thing I can suggest it to do what @HWB3 suggested above, and learn how to read tube data sheets that will guide you on the pinouts, compatibilities, and where adapters are needed.

We are all sharing our experiences with the Valhalla 3 thus far, and many of us plan to do a lot of tube rolling. There will be a lot of recommendations incoming as we all figure out which tubes pair best with various headphones. So stay tuned.

I'm currently listening on the VH3 loaded with Voshkod 6n23p 1972 tubes and HiFiMan Sundara Closed-Backs(CustomCansUK modded) with the impedance multiplier on and high gain with feedback on. These headphones are 20 ohms. The tubes and the HP's sound fantastic!!! Especially if it's Molly Tuttle!!! Listen to the radio!!!
P.S. Have any of you experienced users noticed a difference between a single wire getter 6N6P and a double wire getter?

I've never found that myself. But I do like Brent Jessee's webpage where he details the sound of the different manufacturers. I use that to triangulate a general sound profile when comparing different tube types, say a 6922 and 6SN7. I've found it works pretty well. If I have say 6922 that I find bright, and want something darker, but also in 6SN7, i'll look up the manufacturer sound profiles under 6SN7 and buy what looks like what I want. I'm usually pretty spot on when I test the new tubes.
As for a generic description of what a generic 6922 sound likes vs a generic 6SN7, I've not found anything. I'm not sure it is possible, given the large sonic deltas between different manufacturers and also dates produced. IMO it's better to go after a specific sonic profile you want, and then use the link below to find something that sounds like a match.

Won't fit but you could do wire from the amp to an adapter mounted in something adjacent to your amp - could help w/ temp of the amp and make you a star if it looks cool. If you do make sure the connections are solid and pull proof. You could even lash the tube sockets to the side of the amp! I don't recommend this but...You don't think that they will touch with the width of these tubes?
Check Brent Jessee's site for input tubes, quite a lot of subjective descriptions, and they jibe well with the tubes I know - a fairly small set. Oops, already mentioned.

You can also email Brent. He's recommended many a tube to me based on sonic signature and budget.

All this tube talk has got me itching for another pair too. I have a pair of JJ e88cc’s already. Would it be worth going to the Genelex? Looks like vivatubes has them at a decent price. Ive ordered from tubedepot before, but haven’t from vivatubes yet. Should I stay away from upscaleaudio?

I've purchased from Vivatubes before and never had an issue. Seems like a decent price. Based on what I've heard personally with them in VH3, I'd say give it a try. They sound very good to me.

I'd add that picking up a spare set of 6N1P's from vivatubes is not a bad idea. They might be an upgrade from the stock ones as well.
