Hmm, I do not think anyone mentioned Hayley Westenra. The first song on her most recent album actually gave me goosebumps, first time in a long time.

Carmen McRae is waaayyyy underrated. I like some of her versions of Billie Holiday's signature tunes better than Billie's—which is saying alot because I'm kray-zy for Billie Holiday.

i really dig amy mann's voice...the "magnolia" soundtrack gets regular rotation with me.
charlotte gainsbourg is another moody gal.
nico can send chills down my spine.
love kim deal and trish keenan from broadcast, as well.
and lets not forget nina simone.

Hayley Westenra latest album "Treasure" theres a song "Sonny" which just floored me, last time one did that was Sarah Mclachlan's "Angel". Both their own voice and a piano (a bit of bass for Sarah too).

A lot of voices I'd recommend (Suzanne Vega, Jenny Lewis, Poe) have already come up, but another few with good vocals would be:

Chan Marshalls (Cat Power)
Shirley Manson of Garbage
Johanne Hogg
Tarja Turunen (Formerly of Nightwish)
Sheila Chandra
Azam Ali

A thread about female vocalists not mentioning:

Sandy Denny (of Fairport Convention) and
Linda Thompson (new album out: Versatile Heart)

is not worth to be called a thread about female vocalists. So there.

As for acoustic remakes (not female, sorry): how about Richard Thompson's acoustic version of Oops, I did again (I kid you not) from the album 1000 years of popular music (which might just be the best idea for a concept album. ever.)?
