I made a poster a while back of some of my favorite albums and album art.

MASSIVE IMAGE (as of 05/14/2006 I /might/ be done with it.)

On that, my favorite covers are probably 311 - Live (Top Left) and Rhapsody - Dawn of Victory (Bottom Left, in and up 1 each)

When I'm absolutely sure I'm done, I plan on having that printed and framed.

I think this one's really awesome..

Frank Zappa's "Joe's Garage" also has some really remarckable album artwork - with the intricately-detailed "story line" to the really confusing mazes and object labels - yeah, it's just plain weird!
