So what I'm looking at is that if I want to use Dolby Headphone, I'll need a soundcard that has it as a feature. Then I can either just use souly the soundcard or also chain it to a DAC with a Optical audio out option. Otherwise I'm not sure how I can get surround sound processing for games.

Yea I think you need a Sound Card with Dolby, then you go Optical Out of the Sound Card into a Dac with Optical In to process the sound and send it to the amp, then to ur headphones
 
I belive Optical carries the "extra info" like Dolby Processing, where as USB is just bit perfect audio

What do you mean by "bit perfect audio"? I don't think soundcards have a usb out, or do they?
