Question about amps...

What's the difference between using an amp and say, cranking up the volume? Amps in principle should not distort the sound, but boost it equally across the frequency range, so if the output device is already capable of driving the headphones without an amp, what benefit would using a neutral boosting amp do?

It is all about sound quality and not sound pressure level.
