I would assume most would take the Fidelio sound over the HD598 sound.
Might depend on what sources and DAC/Amp your using.
If you wanted to save some cash, the HD558 uses the same driver as the HD598.
Buy the HD558 used ($90) and remove the black rubber tape from inside the cups.
I am wanting to use them with the iPhone 5S. I have FLAC source material to play the files on the iPhone.
I'm told that it would be a good idea to purchase a new cable instead of the standard cable that comes with the Fidelio X1. If that's the case, what do you recommend?

You will not be able to use the E17's DAC feature with the iPhone 5, just the E17's headphone amplifier.
Might as well save a few dollars and just get the FiiO E11 headphone amplifier ($60).
The iPhone 5 should have no problem driving the 30-Ohm Fidelios, not sure how much the E11 will make a difference.
I'm not informed enough about what cable improves the Fidelio's audio quality.
I personally would just stick with the stock cable.
