with this amp i have the choice of dual 3 pin or single 4 pin xlr, which should i choose and why?

Whichever.  I suggest 4-pin.  Less weight, somewhat less work if you are doing the termination yourself.  If you use two 3-pin XLRs, you will only use two pins of each connector, so might as well stick with 4-pin for the sake of simplicity.
 
Some bling-bling XLR plugs only come in 3-pin versions.
