I would say that's oxidation. As long as you don't notice any differences in sound, there should be no issues. You can't really prevent this as far as I know, it's probably because the plastic sleeve isn't really humidity-proof so the copper oxidises, but again it shouldn't be a problem.

I have a cable from another manufacturer that slowly turned green. Other cables from KB EAR didn't oxidise though, so it appears to be really a hit-and-miss kind of thing, probably due to defects in individual cables.

I have KBEAR Thorough that not only oxidized and got green (which I can leave with) but sadly lost an electrical connection at the plug and became useless.
Many cables do oxidize, and the trend is simple - all fancy colours, starting with golden and dark grey, since these wires are usually covered by some alloy.
Silver-coloured one are most likely silver plated, and hence are the safest bet.
The blue or blue-green is the copper salt, likely chloride or hydroxychloride, with chloride coming from PVC of the insulation. The PVC is a quite poor choice of the polymer, since it also gets stiffer due to leaching of (potentially toxic) plasticizers, but it is most commonly used due to its versatility and low cost.
