"The Last Song"

it's a single, not an album. but it's beautiful in every sense of the word.

"Art Of Life"

again, only one track clocking in at a little under 30 minutes. there are some speed metal parts in it. beautiful nonetheless. the layered piano in the middle sends shivers down my spine. Yoshiki is a wonderful musician.

lastly, to throw some Baroque out there:

Pachelbel's Canon and Gigue in D major for three Violins with Bass Accompaniment

probably the most overplayed classical piece, ever. that doesn't distract from its beauty and simplicity.

My all time favorite "beautiful" music has to Peter Gabriel's "Last Temptation of Christ" soundtrack.
Other notables:
Ludovico Einaudi-buy anything of his that you can get your hands on-stunning yet simplistic/minimal romantic, modern piano.
Deep Forest-all albums
Enigma-the first one (forgot the name-im at work)
Enya-first two (forgot their names-lol)
Philip Glass-The Hours soundtrack
Aphex Twin-Selected Ambient Works-(what a beautifully minimal piece of electronica)
and Talk Talk-Laughing Stock (just a for a little variety)

this is a great list. the enigma album is called MCMXC A.D. (1990 A.D.). I recommend the first Deep Forest album (also called Deep Forest) over all the other albums, but I guess that's a matter of taste. Personally, I don't like the others I've heard.

my favorite enya albums are called watermark and shepherd moons.

others (recommended albums are in bold, recommended songs are italicized):

bang on a can - brian eno: music for airports (this group redid the brain eno classic with natural instruments and voices instead of synthesizers, and it's wonderful)

Barbara Bonney - The Radiant Voice of Barbara Bonney - When I am laid in earth (absolutely gorgeous)

another vote for Cowboy Junkies - The Trinity Sessions

Beck - Sea Change

Crosby, Stills & Nash - Crosby, Stills & Nash - Guinnevere

Klaus Wiese - el-Hadra (single track album, entirely entrancing, perfect late-night music)

Dire Straits - Brothers in Arms - Your Latest Trick and Brothers in Arms

Dire Straits - Making Movies - Romeo and Juliet

Gabriel Fauré - Pavane, Op. 50

Hans Zimmer - Gladiator - Earth

Harold Budd & Brian Eno - Ambient 2: The Plateaux Of Mirrors and The Pearl

Loreenna McKennitt - The Mask and Mirror

more later...

His double live CD is a truly stunning affair. The arrangement of the music is dramatically different from his studio albums, and the improvs are great fun.

A harpist who by his own admission was inspired by Vollenweider is the late Hillary Stagg. Not everything by Stagg is interesting, but I can recommend The Edge of Forever. The whole album is a slow development and blossoming of one beautiful theme, in a classical-music like manner.

And how on earth did I forget LOREENA MCKENNITT?!

The OP seems to be asking more for spacey, gentle, relaxing kinds of music, so I'm going to go through my albums and see what I can find... I'm mostly a fan of electronica, downtempo, singer/songwriter acoustic, and rock music.

I have pretty much all of each of these artists' albums -- the ones I list are, in my opinion, the best.

Bebel Gilberto - Bebel Gilberto
Bebel Gilberto - Tanto Tempo
Beth Orton - Daybreaker
Boards of Canada - Geogaddi
Califone - Heron King Blues
Califone - Roomsound

Lamb - Lamb
Massive Attack - Blue Lines
Modest Mouse - The Moon and Antartica
Morcheeba - Big Calm
Neutral Milk Hotel - In the Aeroplane Over the Sea
Nick Drake - Pink Moon
Pat McGee Band - General Admission
Pink Floyd - Pulse (the best live recording you'll ever hear of any band, ever)
Richard Ashcroft - Alone With Everybody
Royskopp - Melody A.M.
Ryan Adams - Love Is Hell
Sigur Ros - ()
Snow Patrol - Final Straw
Spiritualized - Ladies and Gentlemen We Are Floating In Space
Stereophonics - You Gotta Go There To Come Back

Thievery Corporation - Mirror Conspiracy
Thievery Corporation - The Richest Man In Babylon

This Mortal Coil - again, anything
Poe - "Haunted"
Tori Amos - "Scarlet's Walk"
The Golden Palominos - "Pure"
Portishead - "Dummy"
Steve Tibbetts - "YR"

Godspeed You! Black Emperor - "Lift Your Skinny Fists Like Antennas To Heaven"
Boards of Canada - "Geogaddi"
Gary Jules - "Mad World" (from the "Donnie Darko" soundtrack)
Nick Drake - "Way to Blue: An Introduction to Nick Drake" (I should really own more of his stuff)
