Oy. I'd still want to hear oncoming riders, especially if they are coming from behind. That, and maybe cries of pain from a possible injury ahead of me. (I've been watching too many bike injuries on break.com lately...)

I wouldn't suggest wearing IEMs for anything where you might need to hear. This goes for driving, biking, etc. The isolation is somewhat dangerous, given that you might potentially be better of reacting to noises in your environment, and rather unnecessary since you probably aren't going to be focusing on the music as you exercise. when I go biking, I like to use a (very cheap) set of earbuds that came with my CD player from Sony that have clips to go around your ears. No, they don't sound very nice, but I also would be very un-upset should anything happen to them, I don't worry about them coming out, and if someone screams "LOOK OUT YOU IDIOT" at me, I can (usually) respond in time.
