How to use headphones w/ my TV without purchasing wireless headphones?

My TV has RCA and Digital output Audio (no direct 3.5mm) 
I have an RCA to 3.5mm which works, but with no volume. 
What can I do to use headphones I already have while being able to do volume control

TV -> amp -> headphones?

Sadly there is no 3.5mm output on my TV, so the process is more TV -> RCA to 3.5mm cable -> amp -> inline volume cable -> headphone
 
or maybe I'll take advantage of the situation as proof as to why the "Home Theatre" needs 5.1 surround sound speakers so I can plug in my headphones conveniently

Yeah, just go to Goodwill or Value Village and buy a stereo receiver.  I got a nice Denon receiver from Goodwill for $30.  And it also powers speakers!  Neat!
