I could recommend you quite lot of nice DIY amps if you asked me an amp. However, I think what you've asked was the way how to learn something out of this hobby... so, I would say, "start Cmoy, figure out how it works, then move on to bit more complex amps, and so on". Most tedious part of this solution is that "figure out" part. So, some people just want to skip that part, and they still make a lot of amp, but without having a clue about how it works and why that particular amp behaviors certain ways. That's why I am emphasizing that "figure out" part to everyone here that is new to this hobby, even if it sounds not-so-fun though.
My advice, as others already said, is Cmoy. Tangents site is something you don't want to miss. Get there and read what he said, and then figure it out why he did that way. The purfboard he used at the site is something not very popular in other countries outside US, so... try to make it by yourself on regular 0.1 inch hole purfboard, rewire it follwing by schematics, little differently than what tangent did, try create your own way to make it. In that way, you can really get your own, not a one of those copies of what tangent already made. Fortunately Cmoy is simple enough for that purpose. Then you may move on to other amps.
