Well I realize the last response to this thread was awhile ago, but remarkably no one mentioned Joan Baez or Janis Joplin for that matter. But considering this is your mom, she probably lived through them, so if she is a rather hip mom, I would second the recommendation for Portishead. I like the album "Dummy".

Loreena Mckennit - my favorite female vocalist.

As for a CD by her, The Visit - extremely good celtic music, and some famaliar tunes mixed in too.

dhwilkin - You like her too, eh? She is such an amazing singer, her voice is just so etherial, it almost hangs there in the air.

She likes enya? She will love Loreena Mckennit

Try some Dead Can Dance, Lisa Gerrard has a pretty amazing voice, although it might not be the kind of music you're after, but I guess Enya is the closest comparison.
You may know her from the Gladiator soundtrack.
Be aware that Dead Can Dance stuff has female vocals for some songs, mixed vocals for others, male vocals for others and no vocals for the rest. But Brendan Perry has an amazing voice too.

Good headphone stuff too
