I'm not new to the world of audiohpilia, but previously I've focused on IEMs, terminating in a modded pair of SE846's, now looking to expand and get a set of HD800s, but browsing the classified forums I see that there are lots of posts stating the serial number - is there any reason for this, are earlier / later serial numbers preferable?

The HD800 had a silent revision done. You can find the range somewhere. AFAIK nothing of that sort happened to the HD800s. As for which is better, there are people on both sides that claim one is better than the other
The resale value of the HD800 vs HD800S provide some indication of what the market thinks is a better headphone.
