I prefer HD800, HD700 look and feel cheap, sound-quality-wise I prefer HD800.
After comparing alot of headphones, I ordered the Shure SRH 1840. It was also alot better than the HD700 (unless you really like the sound character of the HD700 though ). And as an added bonus, it's a headphone that is not hard to drive.
But somehow I have the feeling that I will regret not buying the HD800 with a nice DAC + Amp.My biggest reason for not buying the HD800 was that I'm afraid I"m going to need to spend over $2000 to make them sound good after reading how hard they are to drive.
I've had the HD700 for three months and just bought a HD800. I think the HD800 is very different from the HD700. 800 is kind of bright but 700 is quite dark. I prefer the HD800 with my QB9 > DNA sonett amp.

650 sounds congested, yet comfortable and soothing. It's good in it's own right but I'm somewhat of a purist in my sonic preferences so I like the neutrality of 600 and 800.
Just my 2 cents on this...
After trying them both, I found the hd800 to be remarkably better, if you are willing to spend 1000$ on headphones.
