So what are those handle-looking things on the face-plates of amps and other rack-type equipment called? They are prominent on Dartzeel and Audio Research amps, for example. I know that there is a technical usage and word for them, but it escapes me at the moment.

Those are rack handles. Or are you referring to rack ears? The ears have bolt holes/slots so they can attach to the rack.
