Hi!

Noob question, would it make any difference to connect the ground wire from both drivers in Y-split and continue it there as
a single cable to the plug?

This way I could make the "Y-split to plug" section a tad thinner with three wires instead of four.

This is how a lot of headphones are already wired. For example some Beyers come with a single 3 pin XLR on the left side.
