If it's too much trouble, get the bloodhound fang weapon and upgrade it as much as you can. Also, magic or pyromancy helps a lot if you want to attack from a distance. you just need to learn to keep a good distance so you don't get hit.
I find well upgraded straightsword like longsword a good weapon for enemy types in Stormveil. Either longsword or bloodhound fang. When you use either of these weapons, get used to doing in jump attacks. Jump attacks breaks shielded enemies and stagger enemies for more follow up hits to take them down. Jump attack is your friend in this game. Get used to doing it.
For magic, use the Astrologer's staff and glintstone pebble or shard sorcery. For pyromancy, get the fireball incantation from the round table hold.
If you do go with spells, upgrade the casting catalysts for greater damage. For sorcery, greater th INT, greater the damage scaling of sorceries. I think pyromancy depends on Faith and INT being pumped evenly. And the catalyst upgrades increases damage.
If the knights or the spider is giving you a hard time, ignore them and come back to them at a later point in the game. Just sneak around the knights.
Magic is stupidly over powered. Glintstone pebbles shoots rediculously fast. When you are on horse, nothing will reach you since you are so fast from a distance. well, except the mino-bosses. And then there is skill art for Dark Moon Greatsword which is rediculously OP in how much damage it does. I got bored due to the OP of mage build. All good advice. I heard that magic is stupid good in this game, but I've always like being up close in all the others souls games. We'll see.
