Do custom in ear monitors leak sound?  And can you have one unplugged from the cable and one in your ear while listening?  Or are you at risk of damaging your cable end because it's not plugged in into the monitor?

No, they don't leak sound. At least the ones without dynamic drivers and vented shouldn't. Actually any well made IEM with proper tips shouldn't leak any noise. You could achieve excellent isolation using not so expensive headphones and the most important without breaking the bank.

Well, they have the potential for leaking sound if: (1) you're in good health, i.e. your pharynx is clear of mucus, (2) you're prepared to go deaf, (3) attach custom in-ear monitors to a power amplifier and turn the volume to full blast. Then, sound has the possibility of leaking from your nose, mouth, and eyes.
