Im fond of quirky, goofy interpretations of classics.
'Bennie & the jets' (Elton John) by Beastie Boys-(singer sounds totally inebriated, with the band merely drunk).
'Well, Did you Evah!' (Cole Porter) by Deborah Harry and Iggy Pop from 'Red Hot + Blue' (hilarious! Deborah's take on jaded hollywood sluttiness & Iggy & his dopey laugh, what a team).

BTW 'Red Hot + Blue: A Tribute to Cole Porter' (AIDS benefit) is a favorite compilation of Cole Porter covers just for the sheer variety of styles regardless of the success of individual songs. Neneh Cherry's interpretation of 'I've Got You Under My Skin' takes on a hair-raising poignancy.

Superstar - Carpenter cover by Sonic Youth
My Way - Sinatra cover by Sid Vicious

Worst (tie):
Every jazz album that covers Beatles, Prince, Nirvana, etc.
Frank Sintra doing Frank Sintra in late Trilogy-ish days.

I'll second Jeff Buckleys cover of hallelujah by Leonard Cohen. It's better than the original.

Adding to the list it's hard to pick one because of the diversity of music. So...Best Ones

Satisifaction by Devo- a completely different and still great interpretation of a classic Rolling Stones song

Take Me To the River- not as drastic a change but even Al Green likes it.

Higher Ground- Red Hot Chili Peppers they turned a great funk original by Steve Wonder in to a great rock song

What's So Funny About Peace Love and Understanding- Elvis Costello. A lot of people dont even know its a cover of a Nick Lowe song. The intense fury of Elvis's version mops the floor with Lowes version

Worst Cover- A Day in the Life by the Bee Gees from the Sgt. Pepper Soundtrack. That debacle alone should have kept the Bee Gees out of the hall of fame

A slow-downed and unplugged version of Springsteen's "Dancing In The Dark" by Mary Chapin-Carpenter.

Cake's cover of I will survive is fantastic -- I think it is better than the original.

Van Morrison's cover of It's All Over Now, Baby Blue is excellent. Yo La Tengo is great, but what have they covered? I don't remember anything in particular...

Kelly Joe Phelps has a bunch of excellent delta blues covers...
