Hello,
I was planning to change some 20 years old caps on a PSU.
The caps on the PSU are good caps and I have on hand some caps that are double the value of the old ones but these are normal quality caps from the local electronics store.I was planning on putting them with some polyester caps as a bypass.
Is it better to leave the old ones or putting the new ones?

I would get better caps of the same value as are there (think 105 degree C rated), and not bypass them as I normally don't believe in bypassing. Unless you know the circuit in question, doubling cap size may not be what you want to do. Bigger isn't always better.
