Some jazz I would like to hear on a HE1000 in no particular order (have enjoyed on HE6/901), and why:

"Motion" - Hilario Duran (Cuban jazz pianist), extraordinary rhythm, diversity of instruments, fluidity, energy of sound
"Unforgettable" - George Benson, consummate crooner, nice wide orchestral interpretation, well recorded
"On Danish Shores" - Oscar Peterson Quartet - old Pablo recording, flawless instrumental exchanges
"Nobody Else But Me" - Kate Reid (female jazz vocals), fine recording, fine singing and tone, great instrumentation
"Early Autumn" - New York Voices (group vocals), variety of voices and instruments in fine aggregation, vocal bass
"The Good Life" - Joey de Francesco (Hammond organ), controlled squelch to growls on incredible playing
"Night and Day" - Stan Getz and Kenny Barron, People Time, one of the finest duets played, piano/sax sound live
"Flamenco Sketches" Chano Dominguez (Spanish pianist), lyrical delicate Flamenco-jazz piano sounds

The Art of Noise - The Holy Egoism Of Genius (A little light drum & bass to test the low end, jazzy/classical enough for non-EDM heads)
Ellen McIlwaine - Wade In The Water (Funky folk to test how it handles vocal range and high pitch)
Lubomyr Melnyk - Le Miroir D'Amour (Middle-road modern classical to test how it handles up-tempo, finely nuanced piano)
Sunmonx - Parma Panorama (Psydub become jazz tune, with a vibrant, round, opening bass tone unlike anything else I've heard)

"Everything's Fine - David Maxim Micic"    (The orchestral arrangements in this track are superb!)
"Big Yellow Taxi - Counting Crows"    (There is some good, clean bass in this song.. really sounds good in my HE-400)
"My Heart Will Go On - Celine Dion"    (The vocal range of this track gets me every time)
"Take A Chance On Me - ABBA"    (This is just a cool song)

I like to listen to a few tracks from:
Fleetwood Mac - The Dance
 
It's a stellar recording for a "live performance", but it's closer to the Unplugged series in that it's properly mic'ed and is actually culled from three different performances. Really good for determining soundstage depth and imaging, in addition to instrument timbre (for a rock recording). The audience applause and other live elements also are easy to use to distinguish one component from another, given how 'real' they sound. That and it's really good music.
 
For a more recent track:

The live version from the Spotify session sounds great, but the album version is good too.
