I guess the Rolling Stones, Cream and Eric Clapton have done too many to count and they are all good, however these stand out for me.

Not in any order and feel free to add some.

Statesboro Blues - Allman Brothers cover of Blind Willie McTell's song

School Days - AC/DC cover of Chuck Berry's song

Respect - Aretha Franklin covering Otis Redding

Proud Mary - Ike & Tina Turner covering Creedence Clearwater Revival

All Along The Watchtower - Jmi Hendrix cover of Bob Dylan

Black Magic Woman - Santana's version of Fleetwood Mac's song

Hard To Handle - Black Crows cover of Otis

I Just Want To Make Love To You - Foghat cover of Muddy Waters

Move It On Over - George Thorogood cover of Hank Williams

What is very possibly my favorite song of all time is a cover: "Walk Away Renee" as performed by the Four Tops, covering the Left Banke.

Arguably the greatest cover of all time: Janis Joplin's take on Kris Kristofferson's "Me and Bobby McGee" (recorded first by either Roger Miller or Gordon Lightfoot, depending on who you believe). Kristofferson admits that her reading of the song is the definitive version.

Does it count if it goes the other way? Like Nouvelle Vague's cover of Public Image Limited's "This is not a love song"?

Evergreen terrace covering "Mad World" by Tears for Fears?? I've been listening today for some odd reason.

I always forget how often music is covered, I always thought CCR covered Tina Turner, not the other way around.

Half the time. I like the covers better than the original.

Don't forget that many songs on Led Zeppelin 1 and Led Zeppelin 2 are old covers/remakes. Which means they're probably the mest rock covers ever, imho.

Led Zeppelin - "In My Time of Dying"
John Mellencamp - "In My Time of Dying" Two great versions of an old delta blues tune.

Jimi Hendrix - "All Along the Watchtower" The definitive reading of this song.

The Pogues - "Honky Tonk Woman" Banjos and accordions. What else can you say?

Rolling Stones - "Love in Vain", by Robert Johnson My favorite arrangement of this song.

Cream - "Crossroads" by Robert Johnson

Madeleine Peyroux "Walkin After Midnight"

Now that's downright weird. About two days ago, I found a crumbling piece of paper on which I jotted down some of my favorite covers...several years ago.

As with the OP, these are in no particular order, except for the first one:

"Fields of Gold" - Eva Cassidy covers Sting. My favorite cover, period. If I hear this when I'm in the wrong mood, I completely lose it. Cuts the original (which is great to start with) to ribbons.

"Twist and Shout" - Beatles cover the Isley Brothers.
"Summer Breeze" - Isley Brothers cover Seals and Crofts
"You Can't Put Your Arms Around A Memory" - Ronnie Spector covers Johnny Thunders.
"Satisfaction" - Otis Redding covers the Stones.
"Satisfaction" - D.E.V.O. covers the Stones.
"Mr. Tambourine Man" - The Byrds cover Dylan.
"Both Sides Now" - Judy Collins covers Joni Mitchell.
"California Sun" - Ramones cover the Rivieras.
"All Along the Watchtower" - Hendrix covers Dylan
"Pressure Drop" - The Clash cover Toots and the Maytals.
"Demolition Man" - Grace Jones covers the Police.

SRV's cover of Hendrix's "Voodoo Chile" is great.

Led Zeppelin's "No Quarter" cover was great. I forget who the original artist was.

"House of the Rising Sun" - Muse
^ My absolute favorite cover of the song, by one of my favorite rock acts of the past two decades.
"Across The Universe" - Fiona Apple
^ Fiona's voice adds something to the song that John Lennon just doesn't quite achieve.
