IMO the KSC75/35 would be much better for the genres of music you listen to. However, they are both open headphones that leak sound to the outside world and do nothing to prevent outside sounds from impacting your listening. The MX500 would be a little better in both of those aspects.
Yes, they all do. (perhaps with the exception of the earbuds just because they're buds)
The only way to confine the sound to your is using IEM's (similar to earbud, but expensive) or a closed (sealed) headphone. If sound isolation is important to you maybe take a look at the Sennheiser HD201s. But for less than $30, heck for less than a hundred you're not gonna find much better than the Koss KSC75s.

I don't mind the way the stock iBuds fit. Even if they don't isolate, it's the leaking sound that was the problem.

Just how much sound do the KSC75's leak? If it's anything close to an SR60 then I really can't get them.
The HD201 is bulky and doesn't isolate very well at all. 003, with a $30 budget your only options ARE open headphones or earbuds. You'll just have to deal with it I'm afraid.
Just a warning, I personally don't find the MX500 and the iBuds too far apart...
I mean, the MX500 are fine, but the Koss line is a pretty damn big step up.
I tried the MX500s, and I just don't believe they stack up well against the KSC-75 as far as "there-ness" goes. They provide a great sense of soundstage and airiness (for an earbud mind you, which isn't much), but other than on jazz, they just don't do it for me. You really have to play with the positioning. If you want a phone that's easy and sounds great the KSC-75 is the way to go. They don't leak that much.
