There seems to be so many different models of the Little Dot headphone amps that I am confused. Which one sounds best with the Sennheiser HD800's?

Depends on budget. I personally used a Little Dot Mk VIII and it was a fantastic pairing. It has the clarity, just enough tube warmth, and plenty of power / driver control to drive the HD800's - especially when run balanced.
