Would I be better off with a DAC+ amp or just an amp? And what does an amp really do in terms of audio quality?
Best amp for use with iPhone 5/iPad 3 and Beats Solo HD?

You need to get a better pair of headphone first before consider amping.

They aren't that bad! Gawd why does everybody hate on beats? With the eq on my iPhone on flat they outdo my ATH-M45's! But seriously, what amp?

For a DAC/Amp. Fiio E07K or E17.
(you would need a Lightning to USB cable, to use the Fiio DAC feature with iPhone 5)
(Not sure on iPad 3).
Just amplifier, Fiio E11 or E12.

Because they are really sub-par headphones for the price they asked, and with amping, the flaws with it's mid and high range will amplify making your music even worse.
