I've spent time reading the thread at https://www.head-fi.org/threads/best-studio-headphones.702924
A lot useful information.
After trying to digest as much as I can and considering my budget and requirements, I've got it dwindled to a couple of options
I'm ideally looking for 1 cheaper monitoring can for guests etc. and 1 nicer can for mixing and post work
Sony MDR 7510 ~100$ (guest monitoring etc. beater pair)
(A while ago I head the AT MX40, but sold them, they got uncomfortable after long listening.)
Option 1:
Sony MDR 7520 ~240$
Option 2:
Sennheiser HD6XX 175$
The HD6XX at 175$ is very tempting, esp. since I've never had an open back headphones, but I've heard they're great for mixing.
Bonus:
Wireless option for everyday use?
WH-1000XM3 (no usb-c though )
