That's the preferred method in a restaurant because of the consistency it achieves.

Using a pan, or a BBQ(the holy grail) is a little better because of the higher temperatures, which promotes the Maillard reaction, giving you more flavour.

How was BTBAM?  Who they touring with?   I saw them a few months back and they were incredible.

Really really awesome :)
Even better than the first time I saw them.
They are touring with no one I guess. The other band that played that evening was a local band called The Hirsch Effect.
Not my cup of tea.
First time I saw BTBAM, they were supported by Animals As Leaders. Man, that was good!

Another way, which for some is 'cheating' is to cook your steak slowly in water (or broth), then drop it in a hot pan with a generous serving of oil in it. Basically by frying the exterior soon after taking them out, you seal the juices inside.
