I always order a luncheon meat and egg sandwich whenever I go to a HK-style cafe; served with fries and sweetened lemon-tea. I still prefer a nice layered warm corned-beef sandwich with sauerkraut and well-spread mustard and spiced curly fries over any HK cafe or bar-and-grill restaurant or diner though. I generally dislike cold food, so an egg-salad sandwich is usually a no; prepare them hot, egg-y goodness.
