This kind of thread has probably already been done before. Oops.
 
If possible, please list the part of the song that you consider to be the solo. If you don't want to, that's okay too. I didn't when I started this thread so you won't hear any complaints from me

Here are the ones I can think of off the top of my head:
 
Pink Floyd  -  Time  -  (3:29 to 4:54)
 
Pink Floyd  -  Money  -  (3:05 to 5:05)  <-- one of my favorites of all time. LOVE this solo.
 
Pink Floyd  -  Shine On You Crazy Diamond, second half (Parts VI-IX)  -  (2:30 to 4:35)
 
Tool  -  Triad  -  (1:33 to 2:53)
 
Opeth - A Fair Judgement  -  (3:03 to 4:32)  and  (6:18 to 7:31)
 
Pearl Jam  -  Alive  -  (3:38 to 5:31)

Jeff Beck put out some really good guitar work as well so check him out.

I think you should be a little more specific. 
 
Pink Floyd's "Shine On You Crazy Diamond" runs 13:31 for parts 1-5, and then another 12:27 for parts 6-9. That's over 25 minutes of music with a lot of guitar work! Which solo do you mean?
 
Here's my answer:
 
Artist:  The Rolling Stones
Album:  Beggars Banquet (1968)
Track:  Sympathy For The Devil
Guitar Solo:  02:48 - 03:23
 
Reasons why I like it:  It has everything. There are some fast-picked notes, but also there is also plenty of space between notes. During those 35 seconds there is playing and there is also not playing, which is just as important. It's not a matter of playing as many notes as possible as one can find in some other guitar solos. To me, it's got perfect economy. The notes that need to be there are there, but the space between notes and not playing is also there. Instead of on-going wanking, it's 35 seconds of economy.
 
Also, the mixing is perfect. It sounds like that guitar was really loud. It just cuts through the mix like electricity!
 
I also love the way it ends. There is one chord played as the final exit from the solo. Maybe it wasn't even a real chord, but just hitting all the strings while muting them with the other hand. However it was done, that final chord, or non-chord, is the perfect exit from the solo!

Many 70s bands had songs with guitar solos, just a few:

Eagles - remember Hotel California?
Ted Nugent - just listen to Stranglehold.
The Who - Won't Get Fooled Again.
Rush - 2112 Overture.
Derek And The Dominos - Layla.
Allman Brothers Band - many like Jessica, Blue Sky and my all time fav In Memory Of Elizabeth Reed.
The Isley Brothers - Who Is That Lady.
Santana - many.
Genesis - Firth Of Fifth.
Peter Frampton - live of Do You Feel Like We Do.
and my all time favorite
UFO - ROCK BOTTOM live Strangers In The Night album.

Well, one of the best guitar solos I've hear is Firth of Fifth from Genesis album's selling england by the pound. In that album there is another great solo, very slash style... After the Ordeal, great!

Much better example. Now I can listen to your selection specifically. Some of that sounds almost like an electric violin. I wonder what technique Gilmore was using? Is it possible he may have used a bow on the guitar strings or a guitar accessory called an Ebow?
