I have some Mogami W2534 cable and some Neutrik 3-pin XLR connectors, and I'm wondering how to wire them for use between DACs and amps.

The Mogami W2534 has four conductors (two blue, two white) plus the shield, whereas the Neutrik has the 3 pins plus the ground lug. My current plan is to twist the two blue conductors and solder to pin 2, twist the two white conductors and solder to pin 3, and then split the shield into two leads and solder one to pin 1 and the other to the ground lug. But I have no idea if this is the right way to do it or not. I can't seem to find an appropriate diagram.

Thanks!

What you described will work fine. You can also use a simple jumper wire between the grounding lug and pin 1.
